A healthy and refreshing side dish with holiday colors!
Cranberry Walnut Slaw from Gail Myers
1 cup dried cranberries
2 cups green cabbage, finely sliced
1/4 cup thinly sliced red onion
3 Tbsps. coarsely chopped walnuts
Dressing:
2 Tbsp. cider vinegar
1/2 Tbsp. canola oil
1 Tbsp. water
2 Tbsp. honey
1/2 tsp. celery seed
1 tsp. chives
Mix dressing ingredients together until well-mixed. Mix slaw ingredients together, except walnuts. Toss with dressing. Cover and refrigerate 3 hours. Top slaw with walnuts before serving.
